Istruzioni
  1. Fill a large pot half way with cold water.
  2. Add all broth ingredients.

  3. Let simmer for 3 hours.
  4. Put the mound of flour on a wooden surface, and created a well in the center.

  5. Crack the eggs directly into the center of the well, and lightly whisk with a fork.

  6. Work the flour into the egg with the fork from the center to the edges and knead until homogenous.

  7. Let rest for 30 minutes.
  8. Brown the pork loin in melted butter.

  9. Dice prosciutto, mortadella, and pork loin into cubes.

  10. Blend together in a food processor until homogenous paste.

  11. Add freshly grate Parmigiano Reggiano, 1 egg yolk, salt, pepper, and nutmeg.
  12. Mix together.
  13. Cut pieces of the pasta dough and shape into rectangles.

  14. Make flat sheets of pasta using a machine or by hand.

  15. Cut each sheet vertically, and again horizontally about 2 in x 2 inch to create perfect squares.
  16. Roll the filling into tiny balls and place in the center of each pasta square.

  17. Fold into triangle and lightly pinch the ends so the filling does not escape while cooking.
  18. Fold the two bottom corners of the triangle inwards towards the filling and pinch to create pasta shape.
  19. Repeat for all pasta squares.

  20. Filter meat broth and cook pasta for a few minutes in the broth.
  21. Serve with freshly grated Parmigiano Reggiano
