  1. Melt a portion of the butter in a large pot on low heat.

  2. Add the pancetta, carrots, celery, onions, minced beef.

  3. Once the meat has browned, mix in the red wine and tomato sauce.
  4. Mix the whole milk, and salt, and let simmer for 2 hours.

  5. In the meantime, make the pasta dough.
  6. Put the mound of flour on a wooden surface, and created a well in the center.

  7. Crack the eggs directly into the center of the well, and lightly whisk with a fork.

  8. Add the boiled and chopped spinach into the center

  9. Work the flour into the egg and spinach with the fork from the center to the edges and knead until homogenous.

  10. Let rest for 30 minutes.

  11. In the meantime, make the beschamel.
  12. Melt butter in a steep pan.

  13. Mix in the flour.

  14. Whisk in the milk until smooth and creamy.
  15. Add salt and nutmeg.
  16. Cut small pieces from the dough, and shape into rectangles.
  17. Roll into thin rectangular sheets.

  18. Cut in even rectangles.
  19. Cook the rectangles in salted boiling water for 1 minute.
  20. Put the cooked pasta in a bowl of cold water to cool them.
  21. Lay flat to dry on a tea towel-lined baking sheet.
  22. Grate fresh Parmigiano Reggiano

  23. Line an oven-safe pan with butter.

  24. Spoon and spread a layer of bechamel.

  25. Spoon and spread a layer of ragù.

  26. Sprinkle a thing layer of Parmigiano

  27. Cover completely with two sheets of pasta.
  28. Repeat until the pasta is finished (6 layers).
  29. Top with bechamel, ragù, and parmigiano.
  30. Bake at 350° F for 30 min.

  31. Slice and serve.
