  1. Brown the slices of veal in a pan oiled on both the sides. Remove the meat from the pan, clean with paper towel and add new oil.

  3. Once the wine will be evaporated, add a little bit of broth, cover the pan with the lid and let simmer on low heat for about 30 minutes.
  4. Clean the parsley and chop with the lemon zest, creating the “gremolata”.
  5. Once the meat is cooked, add the “gremolata” and simmer for other 10 minutes.
  6. Serve accompanied by risotto alla Milanese.
