Instructions
  1. Pour the EVOO into a heated large pan, add the chopped onion and cup of still white wine.

  2. Let cook on low heat.

  3. In the meantime, desalt the anchovies from the Cantabrian Sea under running water, and fillet them carefully by removing the center bone.

  4. Add the filleted anchovies to the pan and let the sauce reduce slowly.

  5. Boil an abundant amount of water in a large pot, and salt it with coarse salt.

  6. Put the bigoli in the boiling water. Strain the water when the pasta is al dente. Taste it to be sure.

  7. Add the cooked pasta to the pan with the sauce.

  8. Sauté everything together in the pan for a few minutes and serve.
