  1. Put the almonds in the blender and chop them. Add the sugar and blend again.
  2. On a rolling board or a cleaned work surface put the preparation obtained and add 00 flour creating a well in the center. In the center put the butter at room temperature chopped in small pieces and start to knead forcefully. Make a ball and let it rest in the fridge for about 30 minutes.
  3. At the end of the resting period take the dough and create a lot of small balls squashed on one side. Arrange them, spaced between each other, on a tray covered with baking paper and cook for 20 minutes in static oven at 150°.
  4. In the meantime focus on the preparation of the filling: let melt the dark chocolate in a water bath and mix in the egg yolk.
  5. When the little balls of biscuit will be cooled, take them one at a time and dip them in the melted chocolate on the flat side. At this time attach them between themselves making a little bit of pressure in order to make them stuck better.
  6. Your “baci di dama” are ready and they are preserved for many days in a tin can.
