Instructions
  1. Let the extra virgin olive oil heat in a deep pan.
  2. Let the lard brown.
  3. Add the beef pulp and the pork pulp.
  4. Add a tbsp of tomato paste and let simmer.
  5. Add the chicken liver and a tbsp of meat broth.
  6. Put the whole thing in a blender, saving a little bit of sauce and mix.
  7. Put the breadcrumbs in a bowl and add the meat broth.
  8. Put also these in the blender and mix again.
  9. Put in a bowl the preparation and add with a table spoon the sauce you had saved.
  10. Add an egg, cinnamon, salt, Parmigiano Reggiano, pepper, nutmeg, and grated lemon zest and stir.
  11. Fill the green pitted olives with the preparation.
  12. Crush two eggs in a dish and beat them.
  13. Bread the olives in the flour and then pass them in the egg.
  14. Pass the olives in the breadcrumbs.
  15. Let the oil boil in a pan and fry the olives.
  16. Strain them and serve.
